Ingredients
- 2 large eggs
- 30 ml (2 tbsp) milk
- 24 g (3 tbsp) flour
- 1 g (1/4 tsp) baking powder
- 1/2 tsp vanilla extract (optional)
- 1/2 tsp lemon juice
- 26 g (2 tbsp) sugar
Directions
- Separate egg yolks and egg whites
- Add milk to egg yolks and combine
- Mix baking powder into flour and sift into mixture, stirring to combine
- Add vanilla extract (essence)
- Preheat pan over low heat
- Add 1/3 of sugar to egg white and start to whip, also add lemon juice
- Mix in rest of sugar in two parts
- Add 1/3 of meringue into egg yolk mixture and mix
- Fold the rest of the meringue into the egg yolk.
- Oil pan and cook one side for 3 - 5 minutes, until surface is golden brown
- Flip and repeat.
