Ingredients

  • 2 large eggs
  • 30 ml (2 tbsp) milk
  • 24 g (3 tbsp) flour
  • 1 g (1/4 tsp) baking powder
  • 1/2 tsp vanilla extract (optional)
  • 1/2 tsp lemon juice
  • 26 g (2 tbsp) sugar

Directions

  1. Separate egg yolks and egg whites
  2. Add milk to egg yolks and combine
  3. Mix baking powder into flour and sift into mixture, stirring to combine
  4. Add vanilla extract (essence)
  5. Preheat pan over low heat
  6. Add 1/3 of sugar to egg white and start to whip, also add lemon juice
  7. Mix in rest of sugar in two parts
  8. Add 1/3 of meringue into egg yolk mixture and mix
  9. Fold the rest of the meringue into the egg yolk.
  10. Oil pan and cook one side for 3 - 5 minutes, until surface is golden brown
  11. Flip and repeat.
